Since Christmas is just around the corner, I'd thought I'd share with my friends one of my cakes I make that the children just love!  I call it:

Upside Down Applesauce Cake

1/2 cup butter, softened *   1 cup granulated sugar

1 cup packed brown sugar * 3 cups applesauce

1 Tablespoon plus 1 tsp baking soda

1 tsp salt   *                     2 tsps cinnamon

1 teaspoon cloves *           1 tsp nutmeg

1/2 tsp allspice *          2 & 3/4 cups all purpose flour

1/2 cup (or more) chopped pecans or walnuts

2 cups raisins

Cream butter and sugars.  Combine applesauce and baking soda and add to creamed mixture, beating until blended.  Add flour, salt and spices, and mix until smooth.  Stir in nuts and raisins.  Spoon into greased 9x13 pan and bake at 350 degrees for 45 minutes or until cake tests done.  (or bake in tube pan at 350 degrees for 1 hour or until cake tests done)
